Fennel Rhubarb Tequila Lemonade
Serves 1 to 2

I love this because it both tastes like an adult lemonade and a pink margarita. Light, refreshing and a perfect way to infuse a little sophistication into you cocktail rotation.

For the syrup, combine 1 cup sugar + 1 cup water + 1 small thinly sliced fennel bulb + 2 diced stalks rhubarb. Bring to a simmer and cook for 10 minutes, until vegetables are tender. Allow it to seep until cool and strain the syrup.

In a shaker, add the juice of 2 lemons, 2 to 3 ounces of tequila and 1 to 2 ounces of the Fennel Rhubarb Syrup. Shake & strain over ice.

Using a vegetable peeler, peel a stalk or rhubarb for a nice curly garnish. Can also add a sprig of fennel frond. Makes 1 to 2 drinks depending on the size of your glass.

TIP: Curl a bunch of rhubarb ribbons and place in ice water in increase their curl. Can be made in advance.
