Wine Soaked Steak

Grilled Steak and Scallions
Serves 6

1 lb. flank steak
2 cups red wine, such as cabernet sauvignon or malbec
1/4 cup plus 2 tablespoons extra virgin olive oil
1/4 cup Worcestershire sauce
3 bunches thyme or rosemary
1 teaspoons fine sea salt
3 cloves garlic, smashed
2 bunches scallions, trimmed

In a large plastic bag add steak, wine, 1/4 cup olive oil, Worcestershire sauce, herbs and garlic. Marinate for 3-4 hours, but no longer.

Remove steak from marinade and place remaining marinade in a small saucepan. Simmer and reduce until slightly thickened. Pat dry steak and season with salt. Preheat grill or grill pan to medium high heat and sear steak 3-4 minutes per side, for medium rare. Set aside to rest.

In a large bowl toss scallions with remaining olive oil. And grill until slightly charred, about 4 minutes.

Thinly sliced steak on the bias against the grain and plate on top of grilled scallions. Drizzle with reduced marinade.
