Steamed Mussels
Serves 2-4
A round, scrumptious wine, our 2022 Chardonnay Coeurtina defines what a winter white should be. Running through the heart of the estate this wine is full of round robust flavors of orange blossom and citrus. Ideal for a marriage of butter and seafood, this wine will enhance the heartiness of these mussels, making it a filling meal for a winter evening.
1 lb. mussels, cleaned with beards removed
2 tablespoons extra virgin olive oil
3 tablespoons butter
2 leeks, cleaned and sliced
Salt, to taste
1 pinch red pepper flakes
2 heaping tablespoons Dijon mustard
2-3 cups dry white wine
Heat olive oil and butter over medium heat in a large dutch oven or pot that has a lid. Sauté leeks for 3 to 5 minutes, or until translucent. Season with salt, red pepper flakes, and Dijon. Stir together and cook for another minute before adding mussels. Add wine and cover, cooking for 8-10 minutes, or until mussels open.
If mussels on the top or bottom open before the entirety of the group, give the mussels a stir and recover. Repeating until all are open.
Serve immediately with crusty bread for dipping.
