Lemon Pudding
Serves 2-4
Almost as easy as instant and worth the extra step and attention to ingredients.
2 cups heavy cream
3 lemons, zested and juiced
3 eggs
½ cup sugar
Pinch of salt
Combine all ingredients and whisk continuously over medium low heat until bubbling around the edges and thick enough to coat the back of a spoon. Strain through a fine mesh strainer into a bowl and cool in the refrigerator until ready to serve, serve with berries.
