Homemade Farfalle
Serves 2
1 lb. fresh pasta
1 stick butter, cubbed
1/2 cup water
1 bunch
1 bunch chives or parsley, finely chopped
1 lemon, zested
Parmesan or pecorino cheese
Cut pasta into 1” x 2 “ pieces and pinch in the middle to create a bow-tie. Heat 1/2 cup of water in a saucepan and when simmering, slowly whisk in cubes of butter until melted and silky. This may take a few minutes, the idea is to maintain the heat of the water and emulsify the butter into the water.
Add pasta and cook for a minute or two, tossing gently with a spoon. Season with salt, lemon zest, herbs and desired amount of cheese. Serve immediately.
