Fried Egg Tortillas
1-2 eggs & tortilla per person  

Few things scream breakfast more than fried eggs atop a tortilla. It's the perfect pantry breakfast for a cold winter weekend. 

2-3 tablespoons olive or canola oil
1 tortilla, corn or flour
1 egg
2-3 tablespoons tahini paste
Avocado, sliced radishes, hot sauce, smoked almonds, etc., optional garnish

Heat oil in a medium or large skillet over medium-high heat until very warm. Add tortilla and fry for 1-2 minutes per side and set aside. In the same pan add egg and fry yolk side up for 2-3 minutes, using the hot oil to paste liquid-y white pieces of the egg.

Top tortilla with tahini (optional!), add egg and garnish with desired garnishes.
