Chicken Picatta with Lemon Sauce

This is a pantry-driven dish that focus on a few (and quality) ingredients. Tenderize chicken breast by pounding until desired level of flatness. I prefer to keep mind a bit meatier to eliminate the need for a second pan. Boneless chicken thighs or pork loin cutlets also work excellently here. Pair with the 2021 En Cigare Sauvignon Blanc, a heartier Sauvignon Blanc that gains it’s character from the cigar shaped barrels it ferments in. Bright and acidic to complement the lemony zing but comforting and heartier for the colder month of January and the buttery rich sauce this dish creates.
4 chicken breast, skin on or off depending on your preference
2 cups all purpose flour
1 tablespoon salt, divided
3 lemons, zested and juiced, divided
2 tablespoons extra virgin olive oil
2 tablespoons butter
½ dry white wine, can be the 2021 En Cigare Sauvignon Blanc of something similar
Handful of chopped parsley, garnish
Preheat oven to 375ºF.
If desired, pop chicken in a resealable plastic bag and bang a few times with a rolling pin of heavy sided pan. This will help tenderize the meat and flatten it slightly to help with the cooking time. It’s totally optional!
Heat a large oven-safe skillet over medium heat (don’t want to have it higher, it’ll burn the butter), and add olive oil and butter.
While pan is heating, season chicken on both sides with a sprinkling of salt, don’t go crazy here, you’ll season the flour too. In a shallow bowl add flour and tablespoon (sans the bit from above), into the bowl. Stir in lemon zest.
Dredge each piece of chicken until fully coated with flour and shake off anything excess. Then add chicken breast to the pan. Do this for remaining breast. Cook chicken 5-6 minutes per side, until golden brown. Flip chicken and add lemon juice and wine.
Place entire pan in the oven and cook for an additional 10-15 minutes or until chicken is fully cooked and the sauce is thickened slightly. Garnish with parsley if desired and serve with rice, potatoes, and/or a vegetable of your liking.
