Roasted Sweet Potatoes

Roasted Sweet Potatoes
Serves 6

6 sweet potatoes
Salt
Créme fraîche or mascarpone cheese
½ cup toasted pepitas
¼ cup honey

Preheat oven to 375º F. Make 6 small salt mounds on a large sheet tray. Poke each potato with a fork and place one potato on one of each of the salt mounds. Roast for an hour or until tender. Cool slightly.

Cross hatch the skin of the potato and fill with a dollop of créme fraîche or mascarpone. Top with pepitas and a drizzle of honey.
