Oysters with Pink Peppercorn Mignonette

Few things elevate the start of an evening or occasion more than oysters. Elegant and refined, these West Coast Kushi Oysters are packed with iron and magnesium. Pair with our 2018 Blanc de Blanc Méthode Champenoise. This vintage is our first sparkling wine crafted in “Tête de Cuvée” a French term reserved for the finest bottlings. These salty, briny oysters awake the palate and then are cleansed by this mellow and floral sparkling wine. For the evening “on the town” at home, this is the way to go. PS you can have your fish monger shuck and popped on ice if the task seems to daunting. 

12 oysters, such as kushi oysters
½ shallot, about ¼ cup, minced
¼ cup white wine vinegar
1 teaspoon freshly cracked pink peppercorn
Pinch of salt

Shuck oysters and place on crushed ice or salt. In a small bowl, mix together shallot, white wine vinegar, peppercorn and salt. Garnish each oyster and serve immediately.
