Mimosa Pancakes with Supremed Citrus

Yes to everything in this recipe. Pump up the sophistication of pancakes not only with sparkling wine but by using olive oil and quality citrus, serve with powdered sugar for a daintier less basic version of the breakfast staple.

2 cups all purpose flour
2 teaspoon baking powder
½ teaspoon salt
½ cup milk
2 tablespoons sugar
1 teaspoon of orange zest + ½ cup orange juice
2 eggs
2 tablespoons extra virgin olive oil plus extra for pan
¼ cup sparkling wine or champagne
Powdered sugar, garnish
Supreme citrus, such as oranges and grapefruit, garnish

Whisk together flour, baking powder and salt. Make a well in the center of the bowl and add milk, sugar, orange zest and juice, eggs, olive oil and sparkling wine. Using a whisk break up wet ingredients and incorporate into dry ingredients. Mix until fully combined and not clumpy.  

Heat a large skillet or griddle over medium heat and enough add olive oil or butter to coat the pan. Add about 1/3 cup pancake batter and cook until batter is bubbling, about 2 minutes. Flip and cook for an additional minute. Repeat for all pancakes and serve with supremed citrus such as oranges and grapefruit and dust with powdered sugar.
