Buffalo Chicken Lettuce Wraps
Serves 6-8

Quick, easy and healthy-ish. Don’t give up all the fun during a January game day. Set it and forget it and then shred and stuff in your lettuce leaves to your liking. Double up the leaves if desired and top with traditional taco toppings. 

3 lb. chicken breasts
Salt
Pepper
1 onion, minced
3 celery stalks, minced
3 cloves garlic, minced
¾ cup hot sauce 
¼ cup butter
¼ cup chicken stock 
2 heads bibb or butter lettuce
Thinly sliced radishes, garnish
Cilantro leaves, garnish
Sliced jalapeno, garnish 
Goat cheese, optional garnish 
Limes, garnish

Season chicken breasts with salt and pepper. To the Instant Pot add chicken, onion, celery, garlic, hot sauce, butter, and stock. Pop lid on and set on manual cook for 15 minutes. After 15 minutes, release the pressure and allow the mixture to sit for 5 minutes before removing the top.

Shred chicken and place in lettuce. Top with radish, cilantro, jalapeno, and cheese. Squeeze some lime on top for a bit of acid and serve while hot.
